What does cold-finished stainless steel mean?

Steel-makers can finish their steel hot, just out of the furnace, or cold, which means at room temperature. Either way, steel is finished by squeezing through giant rollers. Cold-finished stainless steel isn't common, but it has a lovely, unoxidized finish which is useful for some special applications.
